German-Style Vegan Potato Salad
Ingredients:
1 lb. potatoes, cut into quarters
3 tablespoons Vegenaise (Best vegan mayo!)
2 tablespoons packed light brown sugar
1 teaspoon spicy brown mustard
3 tablespoons cider vinegar
1/2 cup chopped green onions (scallions)
Optional:
A few of your favorite veg bacon strips, cooked & chopped into pieces
A few of your favorite veg bacon strips, cooked & chopped into pieces
or veggie bacon bits
Directions:
Boil potatoes until just tender. Drain. Stir vinegar over potatoes.
In another bowl- mix together vegan mayo, brown sugar and spicy brown mustard. Mix together with potatoes. Garnish with green onion and veggie bacon bits/ strips.
Delicious served warm or cool.
Note: adjust amount of sugar to meet your taste
