Description

A Bite Sized Celebration

These fudgy brownie cups topped with coconut whipped cream and fresh berries make a festive, colorful treat that is perfect for holidays, cookouts or anytime you want a sweet little celebration.


Ingredients

Scale
  • 1 cup all purpose flour

  • 1 cup sugar

  • 1/3 cup cocoa powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

  • 1/2 cup water

  • 1/2 cup melted nondairy butter

  • 1 teaspoon vanilla extract

  • 1 cup coconut whipped cream

  • strawberries washed and quartered

  • blueberries washed


Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and lightly grease or line a muffin pan.

  2. In a large bowl, sift together flour, sugar, cocoa powder, salt and baking powder.

  3. Make a well in the center and pour in water, melted nondairy butter and vanilla.

  4. Stir until fully combined.

  5. Fill 9 muffin cups halfway with batter, adjusting for larger or smaller brownies if desired.

  6. Bake for 18 to 25 minutes depending on desired fudginess.

  7. Allow brownies to cool completely.

  8. Top each brownie with coconut whipped cream. Optional: place in freezer for 10 minutes to help set.

  9. Add strawberries and blueberries on top and enjoy.

Notes

Serve chilled on a hot day for a refreshing twist.

Drizzle with melted chocolate or berry coulis for extra flair.

Add extra berries or a sprinkle of coconut flakes for even more festive color.
