Description

Buckeyes are a classic treat inspired by the beloved Ohio nut, and this vegan version brings all the creamy, chocolatey goodness without any animal products. These peanut butter balls are soft, rich, and just sweet enough, with a signature chocolate coating that leaves a peek of peanut butter exposed on top.

This recipe is perfect for holiday parties, potlucks, or a special treat at home. The chocolate coating sets firmly, giving a satisfying bite, while the peanut butter interior stays creamy and flavorful. Bonus: any leftover melted chocolate can be used to dip pretzels, nuts, or fruit for an easy extra snack.


Ingredients

  • 16 oz powdered sugar

  • 1 cup chunky peanut butter

  • 2/3 cup vegan margarine, softened

  • 1/2 teaspoon vanilla extract

  • 1 bag vegan chocolate chips or chopped vegan chocolate

  • 1/4 cup vegetable shortening

  • Toothpicks


Instructions

  1. Combine the powdered sugar, peanut butter, margarine, and vanilla. Roll the mixture into quarter-sized balls. They should be somewhat firm; add more powdered sugar if needed. Freeze the balls briefly to help them harden.

  2. Melt the chocolate and vegetable shortening in the microwave for 1.5โ€“2 minutes, being careful not to overheat.

  3. Insert toothpicks into the peanut butter balls and dip each into the melted chocolate. Leave a small portion of peanut butter exposed at the top to resemble a Buckeye. Shake off excess chocolate and place the balls back on wax paper.

  4. Refrigerate until the chocolate sets. Serve once firm.

  5. Optional: Use leftover chocolate for dipping pretzels, nuts, raisins, or fruit.

Notes

Freeze the peanut butter balls briefly to make dipping easier.

Gently tap off excess chocolate to keep the classic Buckeye look.

Store in an airtight container in the fridge to maintain freshness.
