2 4 oz jars curry paste (green is hottest, red and yellow are milder)

1 tbsp tomato paste

1 tsp ground ginger (or fresh grated ginger)

1 tsp cayenne (optional, omit if you don’t like spicy)

1 large onion, chopped

1 lb bag frozen bell peppers

1 lb bag frozen vegetables (green beans or any mix)

1 package chick’n strips (Gardein, Tofurky, Lightlife, or Beyond Meat)

1/2–1 cup vegetable broth (adjust for desired thickness)

Instructions

Mix coconut milk, curry paste, tomato paste, ginger, and cayenne (if using) in the bottom of a 6-quart crock pot to create the sauce.

Add the onion, frozen bell peppers, and other frozen vegetables. Stir to coat evenly with the curry sauce.

Season with salt and pepper to taste.

Place chick’n strips on top of the vegetables and pour vegetable broth over everything.

Stir gently to ensure chick’n is covered in sauce.

Cover and cook on high for ~4 hours or low for ~8 hours.
