A Savory, Sliceable, Crowd Pleasing Plant Based Quiche Made Simple

This easy vegan quiche combines mushrooms, spinach, and Just Egg in a flaky pie crust for a savory, satisfying dish perfect for brunch or make ahead meals.


Ingredients

  • 2 cups mushrooms

  • 1 yellow onion, diced

  • 1 teaspoon garlic, chopped

  • 2 cups spinach, finely chopped

  • 1 bottle Just Egg

  • 1 teaspoon black pepper

  • 1 teaspoon turmeric

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • 1/2 teaspoon black salt

  • 1 Wholly Wholesome Traditional 9 inch pie shell


Instructions

  1. Preheat the oven to 325 degrees Fahrenheit.

  2. Heat a small amount of olive oil in a skillet over medium heat.

  3. Sauté mushrooms, onion, and garlic for about 4 minutes until softened.

  4. Add spinach, black pepper, turmeric, garlic powder, salt, and black salt. Sauté for 2 more minutes until spinach is wilted.

  5. Transfer vegetables to a colander and drain off excess moisture.

  6. Spread drained vegetables evenly into the pie shell.

  7. Pour the full bottle of Just Egg over the vegetables.

  8. Place the pie on a baking sheet and bake for 1 hour until set.

  9. Allow the quiche to cool for 10 minutes before slicing and serving.

Notes

Serve with a crisp green salad and vinaigrette for a balanced meal.

Add roasted potatoes or fruit on the side for a brunch plate.

Sprinkle fresh herbs like chives or parsley on top before serving.
