130 g extra firm tofu (about 1 half heaping packed cup)

2 teaspoons vanilla extract

1/4 teaspoon ground cinnamon

1/8 teaspoon salt

1 tablespoon vegan butter (optional, plus more for brushing the pan)

6 thick slices crusty white bread, about 1 inch thick and slightly stale
Instructions

Add everything except the bread to a blender.

Blend until completely smooth and custardy.

Preheat a griddle or skillet over medium low heat. A temperature of 350 degrees works well if using a griddle.

Brush the surface with a little vegan butter to help the bread develop a beautiful golden crust.

Pour the custard into a wide bowl. Dip each bread slice into the mixture, letting it soak for about 20 seconds per side. Be sure to coat the edges too.

Place the soaked slices onto the hot griddle.

Cook for 4 to 5 minutes per side, leaving the slices undisturbed so the surface becomes deeply golden. If it begins to darken too quickly, reduce the heat.
