  • 2 pounds fresh tofu, frozen overnight, thawed, drained, and squeezed, then cut into ½-inch chunks

  • 1 cup peanut butter

  • ¼ cup vegetable oil

  • 1 teaspoon paprika

  • 2 teaspoons salt

  • 2 teaspoons garlic powder

  • ½ teaspoon black pepper

  • 1 bottle barbecue sauce (try Annie’s) or 12 ounces homemade sauce


Instructions

  1. In a large bowl, mix together the peanut butter, oil, and spices until smooth.

  2. Add tofu chunks and fold gently to coat evenly. Let sit for at least 1 hour to soak up flavor.

  3. Spread tofu evenly on a lightly oiled baking sheet.

  4. Bake at 350°F for 30 minutes, flip, and bake another 30 minutes until golden and crisp.

  5. Pour barbecue sauce over the tofu and fold to coat.

  6. Return to the oven and bake 10 more minutes, until the sauce is thick and sticky.

  7. Let cool slightly before serving.

Notes

Freezing tofu first gives it a meaty, chewy texture that soaks up more sauce.

Use parchment paper to make cleanup easy.

For a spicy kick, add a pinch of cayenne or red pepper flakes.
