Ingredients

1 cup rice

1 can black beans

1 can vegetarian refried beans (optional)

1 can corn

1/2 tomato, diced

1/2 red onion, diced

1/3 head lettuce, chopped

2 scoops salsa, or more to taste

Optional toppings: vegan cheese shreds, guacamole, cilantro, lime
Instructions

Cook the rice according to package instructions.

While the rice cooks, prep the vegetables by dicing the tomato and onion and chopping the lettuce.

Heat the black beans and refried beans on the stovetop or in the microwave.

Once the rice is done, add it to a bowl.

Layer on the beans, corn, veggies and salsa.

Top with vegan cheese shreds and homemade guacamole.

Serve immediately and enjoy.
Notes
Add fresh lime juice, cilantro or extra guacamole to brighten the flavors.
You can also serve this bowl with tortilla chips for some extra crunch.
