Description

A Crispy Shaved Tofu Sandwich With Melty Vegan Cheddar and Truffle Mayo

This hearty vegan sandwich layers pan fried shaved tofu with sautéed peppers and onions, dairy free cheddar, fresh tomato, and arugula on sourdough bread for a satisfying, flavor packed meal.


Ingredients

  • 4 slices sourdough bread

  • 1 block extra firm Nasoya tofu

  • 1 tomato, thinly sliced

  • 2 tablespoons truffle mayo

  • 1 cup arugula

  • 1 onion, sliced

  • 1 yellow pepper, sliced

  • 1 teaspoon Miyoko’s vegan butter

  • 1/2 cup So Delicious cheddar style shreds

  • Olive oil, for cooking

  • Garlic powder, to taste


Instructions

  1. Slice the tofu lengthwise using a potato peeler to create thin shavings. Rotate the block as needed.

  2. Slice the onion and yellow pepper.

  3. Heat a small amount of olive oil in a pan over medium heat. Pan fry the tofu shavings until golden and crisp.

  4. In a separate pan, sauté the onion and yellow pepper until softened and lightly caramelized.

  5. Sprinkle garlic powder over the tofu. Add the peppers and onions on top of the tofu.

  6. Sprinkle the vegan cheddar over the mixture. Add a small splash of water, cover with a lid, and cook until the cheese is melted.

  7. Optional: Toast the sourdough with vegan butter until golden.

  8. Spread truffle mayo on both slices of bread. Layer with tomato slices and arugula.

  9. Top with the hot tofu, pepper, onion, and cheese mixture. Close the sandwich and serve immediately.

Notes

Serve with kettle chips, a simple salad, or roasted vegetables for a full meal.

Swap sourdough for ciabatta, rye, or gluten free bread if preferred.

Add pickled onions or hot sauce for extra bite and heat.

This sandwich pairs well with a light soup or chilled pasta salad.
