Description

Savory Vegan Breakfast Quiche

This savory vegan breakfast quiche is made with Just Egg, Certified Vegan Omni Pork, and melty dairy-free cheddar baked into flaky pie crusts. A satisfying brunch favorite that is easy to prepare and perfect for sharing.


Ingredients

  • 1 bag Certified Vegan Omni Pork

  • 2 vegan pie shells

  • 2 containers Just Egg

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper

  • 1 teaspoon olive oil

  • 1 onion, diced

  • 1/2 cup sliced cherry tomatoes

  • 8 cherry tomatoes, sliced for topping

  • 1 cup Follow Your Heart Cheddar Shreds


Instructions

  1. If using frozen pie crusts, follow the package instructions to par-bake the shells. Set aside once baked.

  2. Preheat the oven to 375°F.

  3. Pan fry the Certified Vegan Omni Pork according to package directions. Once cooked, dice into small pieces and set aside.

  4. In the same pan over low heat, add olive oil, diced onion, garlic powder, onion powder, and black pepper. Sauté for 5 minutes.

  5. Add 1/2 cup cherry tomatoes and cook for an additional 3 minutes. Remove from heat.

  6. Place both pie shells on a sheet pan. Evenly distribute half of the Omni Pork mixture into each crust.

  7. Pour half a container of Just Egg into each pie shell.

  8. Sprinkle 1/2 cup vegan cheddar shreds over each quiche.

  9. Add remaining Omni Pork mixture and pour the remaining Just Egg evenly into both quiches.

  10. Top with sliced cherry tomatoes.

  11. Bake on the middle rack for 40 to 45 minutes, until the center is set.

  12. Let cool for 15 minutes before slicing and serving.

Notes

Par-baking the crust helps prevent a soggy bottom.

Let the quiche rest before slicing so it holds together.

Customize with spinach, mushrooms, or peppers.

Store leftovers in the fridge and reheat gently.
