Crunchy Creamy Goodness
This fresh broccoli salad mixes crisp veggies, juicy grapes and sweet dried cranberries with a silky cashew dressing for the perfect crunchy, creamy side. It is refreshing, colorful and full of plant powered flavor.
Ingredients
Dressing

3/4 cup raw cashews, soaked

1/4 cup water

2 tablespoons pure maple syrup

2 tablespoons apple cider vinegar

1/2 teaspoon minced garlic

Heaping 1/2 teaspoon sea salt

Fresh black pepper
Salad
-
2 large broccoli crowns, finely chopped

1 1/2 cups halved red grapes
-
1/3 cup finely chopped roasted salted almonds

3/4 cup diced red onion
-
1/3 cup dried cranberries or raisins
Instructions

Soak cashews in water for 2 hours or overnight. For a high speed blender, soak in hot water for 10 minutes.

Drain cashews and add to a blender with all dressing ingredients. Blend until smooth and creamy.

In a large bowl combine broccoli, grapes, almonds, red onion and dried cranberries.

Pour dressing over the salad and toss thoroughly to coat.

Season with salt and pepper and serve chilled.
Notes
