Description

A Cozy Cookie That Brings All the Pumpkin Spice Joy

These soft pumpkin cookies are fluffy, warmly spiced and topped with a simple, creamy frosting that makes each bite a melt in your mouth fall inspired treat.

Cookies

  • 1 cup Earth Balance Soy Free Buttery Spread 2 sticks

  • 1 cup granulated sugar

  • 1 tablespoon milled flax seed blended with 2 and 1 half tablespoons water

  • 2 and 1 half teaspoons vanilla extract divided

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 half teaspoon salt

  • 1 half teaspoon ground cinnamon

  • 1 half teaspoon ground nutmeg

  • 1 cup canned pumpkin

  • 2 cups all purpose flour

Frosting

  • 6 tablespoons Earth Balance Original Buttery Spread room temperature

  • 1 quarter cup firmly packed brown sugar

  • 3 quarter cup confectioners sugar

  • 3 tablespoons almond milk or other plant based milk


Instructions

  1. Preheat oven to 350 degrees and line baking sheets.

  2. In the bowl of an electric mixer, beat Earth Balance and sugar on medium high for 1 to 2 minutes until well combined.

  3. Add flax egg and 2 teaspoons vanilla. Mix to combine.

  4. Add baking powder, baking soda, salt, cinnamon and nutmeg. Mix again.

  5. Add pumpkin and flour. Mix until you have a smooth cookie dough.

  6. Drop dough by tablespoon onto baking sheets.

  7. Bake 9 to 10 minutes or until tops are set.

  8. Cool cookies on wire racks.

  9. For frosting, beat Earth Balance spread, brown sugar and remaining vanilla until smooth.

  10. Add confectioners sugar and milk. Beat until light and fluffy. Adjust thickness by adding small amounts of milk or powdered sugar as needed.

  11. Spread frosting over cooled cookies and sprinkle with cinnamon.

Notes

Add a drizzle of warm maple syrup for extra sweetness.

Serve with chai tea or hot cider for maximum cozy vibes.

Top with chopped pecans or pumpkin seeds for a crunchy finish.
