This easy vegan banana bread uses ripe bananas, simple pantry staples, and plant based ingredients to create a perfectly tender loaf. Ideal for breakfast, snacking, or sharing with friends.


Ingredients

  • 4 medium ripe bananas

  • 1/4 cup vegan butter, melted

  • 1/4 cup unsweetened non dairy milk

  • 1/2 cup light brown sugar, packed

  • 2 teaspoons pure vanilla extract

  • 2 cups unbleached all purpose flour

  • 1 teaspoon cinnamon

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

Optional Add Ins

  • 1/4 cup chopped walnuts, pecans, or cashews

  • 1 sliced banana for topping


Instructions

  1. Preheat the oven to 350°F. Grease a 9 by 5 inch loaf pan with vegan butter, then lightly dust with flour and tap out excess.

  2. In a large bowl, mash the bananas until mostly smooth.

  3. Add brown sugar, melted vegan butter, vanilla extract, and non dairy milk. Whisk until well combined.

  4. Add flour, baking soda, salt, and cinnamon. Mix until just combined and no dry spots remain.

  5. Fold in nuts if using.

  6. Pour batter into prepared loaf pan. Add banana slices or nut topping if desired.

  7. Bake for 45 minutes. Cover loosely with foil and bake an additional 10 to 15 minutes.

  8. Bread is done when a toothpick inserted in the center comes out with a few moist crumbs.

  9. Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Use very ripe bananas for the best sweetness and flavor.

Do not overmix the batter to keep the loaf tender.

This bread slices best once fully cooled.

Serve with vegan butter, nut butter, or plant based cream cheese.
