Ingredients

4 medium ripe bananas

1/4 cup vegan butter, melted

1/4 cup unsweetened non dairy milk

1/2 cup light brown sugar, packed

2 teaspoons pure vanilla extract

2 cups unbleached all purpose flour

1 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon salt
Optional Add Ins

1/4 cup chopped walnuts, pecans, or cashews

1 sliced banana for topping
Instructions

Preheat the oven to 350°F. Grease a 9 by 5 inch loaf pan with vegan butter, then lightly dust with flour and tap out excess.

In a large bowl, mash the bananas until mostly smooth.

Add brown sugar, melted vegan butter, vanilla extract, and non dairy milk. Whisk until well combined.

Add flour, baking soda, salt, and cinnamon. Mix until just combined and no dry spots remain.

Pour batter into prepared loaf pan. Add banana slices or nut topping if desired.
