These fresh and flavorful zesty vegan tacos feature seasoned plant-based crumbles, melty vegan cheese, and a bright cilantro lime salsa. Easy to make and perfect for any meal of the day.


Ingredients

  • 1 pack Certified Vegan Lightlife Smart Ground Plant Based Crumbles

  • 1/2 teaspoon olive oil

  • 1/2 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon cumin powder

  • 1 tablespoon nutritional yeast

  • 1/2 cup Violife Cheddar Shreds

  • 1/3 cup water

  • 4 flour tortillas

  • 1 large sweet white onion, diced

  • 1 cup chopped cilantro

  • Juice of 4 limes

  • Pinch of salt


Instructions

  1. In a bowl, combine diced onion, chopped cilantro, lime juice, and a pinch of salt. Mix well and set aside to let the flavors meld.

  2. Heat a pan over medium heat and add olive oil. Add the plant-based crumbles, smoked paprika, garlic powder, onion powder, and cumin powder. Sauté until lightly golden and the spices are well absorbed.

  3. Stir in nutritional yeast, vegan cheddar shreds, and water. Cover with a lid and cook until the cheese is melted and everything is well combined.

  4. Warm the tortillas in a pan until soft and pliable.

  5. Fill each tortilla with the cooked crumbles and top with the fresh salsa. Serve immediately.

Notes

Let the salsa sit for a few minutes to deepen the flavor.

Cover the pan while melting the cheese to prevent sticking.

Warm tortillas just before serving for the best texture.

Add extra lime or cilantro if you like even more brightness.
