Description

Golden Garlic Herb Potatoes With Crispy Edges And Savory Seasoned Coating

These oven roasted potatoes are tossed in olive oil, cornstarch, garlic, herbs, and spices, then baked until deeply golden and irresistibly crispy.


Ingredients

Scale
  • 7 to 8 large russet potatoes

  • 1.5 tablespoons cornstarch

  • 2 to 3 tablespoons olive oil

  • 1.5 tablespoons minced garlic

  • 1 tablespoon dried chopped onions

  • 1 teaspoon garlic powder

  • 1 teaspoon rosemary

  • 1 teaspoon oregano

  • 2 teaspoons black pepper

  • 3/4 tablespoon turmeric, optional

  • 1.5 tablespoons nutritional yeast

  • 0.5 teaspoon cajun seasoning

  • 0.5 teaspoon chili powder

  • 1 teaspoon sea salt

  • 1 teaspoon lemon pepper seasoning

Ingredient measurements are flexible. Adjust seasoning amounts to taste and scale as needed for your guest count.


Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Wash and cut the potatoes into chunks about the size of the end of your thumb. Peel if desired.

  3. Place the potatoes in a large bowl. Drizzle with olive oil and mix with your hands until evenly coated.

  4. In a separate bowl, mix together all remaining dry ingredients.

  5. Sprinkle the seasoning mixture over the potatoes and toss until evenly coated.

  6. Spread potatoes out on a rimmed baking pan in a single layer.

  7. Bake for 20 minutes, then stir or flip the potatoes.

  8. Return to the oven and bake an additional 10 to 20 minutes until golden, crispy, and fork tender.

Notes

Serve with vegan aioli, ketchup, or a drizzle of lemon juice for extra brightness.

Add chopped fresh herbs like parsley or thyme after baking for a fresh finish.

These potatoes work well as a base for bowls topped with veggies and sauces.

Leftovers can be reheated at 400 degrees for 10 to 15 minutes until crispy again.
