Whether you use fresh summer peaches or frozen ones straight from the bag, these popsicles blend up quickly into a smooth, peachy mixture that freezes into a cool, cheerful treat.

Ingredients

Scale
  • 1 1/2 cups Silk vanilla soymilk

  • 2 cups fresh or frozen peaches

  • 3 tablespoons sweetener of choice
    (agave, maple syrup or your preferred option)

  • 1 dash salt

  • 8 ice pop molds or small paper cups

  • 8 popsicle sticks


Instructions

  1. Add the soymilk, peaches and sweetener to a blender.

  2. Blend until completely smooth and creamy.

  3. Pour the mixture evenly into molds or paper cups.

  4. If using paper cups, cover each one with plastic wrap and poke the stick through the center to keep it upright.

  5. Freeze for 2 to 3 hours, or until fully solid.

  6. Enjoy straight from the freezer.

Notes

You may substitute 2 cups of any fresh or frozen fruit or berries.

Serve these peach pops straight from the freezer or swirl in a little blended strawberry puree for a fun double flavor.

They also make a bright, refreshing afternoon pick me up on hot summer days.
