Classic Potato Salad

Description

Cool and Creamy Picnic Magic

This classic potato salad mixes tender potatoes with a creamy, tangy dressing and plenty of crunchy veggies. It chills beautifully and brings a fresh, comforting flavor to potlucks, picnics and everyday meals.


Ingredients

Scale
  • 1.5 pounds baby yellow potatoes

  • 1 cup plant based mayo

  • 2 tablespoons white vinegar

  • 1 tablespoon yellow mustard

  • 3/4 cup chopped celery

  • 2 to 3 chopped green onions

  • 1 chopped kosher dill pickle

  • Salt and pepper to taste


Instructions

  1. Add potatoes to a large pot, cover with water and bring to a boil. Lower to a simmer and cook 10 to 15 minutes until slightly fork tender.

  2. Drain and leave potatoes in the colander. Cover with a clean kitchen towel and let steam for 15 minutes. Uncover and cool another 15 minutes.

  3. While potatoes cook, make the dressing. In a large bowl mix mayo, vinegar, mustard, celery, green onions, dill pickle and pepper. Chill until needed.

  4. Once potatoes are cool enough to handle, cut into quarters.

  5. Add potatoes to the dressing and gently fold to combine. Season with salt and adjust flavor as needed.

  6. Chill at least 1 hour before serving.

  7. Enjoy chilled.

Notes

Since the potatoes are going to steam, you don’t want them to be completely soft. You will need to boil them for 10-15 minutes to achieve this.

Once you cut them in quarters, the skins should easily peel off. Feel free to leave the skins on if you want to skip this step.

Serve alongside veggie burgers, sandwiches or grilled vegetables.

It also pairs beautifully with fresh fruit, baked beans or your favorite summery sides.
