Ingredients

2 cups dry brown lentils

1 small yellow onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

16 small corn tortillas

1 recipe pico de gallo

8 ounces plant based sour cream

2 small avocados, sliced
Instructions

In a skillet over medium heat, lightly toast the corn tortillas on both sides until warm and flexible.

Sort and rinse the lentils.

Bring 3 cups of water to a boil. Add lentils and return to a boil.

Reduce heat to low, cover and simmer for 20 minutes until tender but not mushy. Drain well.

While the lentils cook, prepare the pico de gallo and mix the taco seasoning.

In a large skillet, cook the diced onion and minced garlic in olive oil over medium heat until softened.

Add the drained lentils, taco seasoning and 1/2 cup water.

Stir and cook for 3 to 5 minutes until the mixture thickens.

Season with salt.

Build each taco with about 1/4 cup of lentils, a slice of avocado, a spoonful of pico de gallo and a dollop of plant based sour cream.

Top with cilantro if desired.
Notes
Serve these tacos with lime wedges, fresh cilantro, shredded lettuce or extra pico de gallo.
The lentil filling is also delicious on nachos, in burrito bowls or inside crispy lettuce cups.
