Brown Sugar Barbecue Baked Beans

Description

A Spoonful of Sweet Barbecue Bliss

These sweet and smoky baked beans cook until the sauce becomes thick, bold and caramelized. Big barbecue flavor with simple ingredients makes this an easy go to side for any meal.


Ingredients

  • 1 fifteen ounce can pinto beans with liquid

  • 1 tablespoon water

  • 1/2 tablespoon cornstarch

  • 1/4 cup vegan ketchup

  • 1/4 cup vegan brown sugar

  • 1 tablespoon white vinegar

  • 2 teaspoons minced onion

  • 1 teaspoon Bacos or vegan bacon bits, plus extra for garnish

  • 1/4 teaspoon dry mustard powder

  • 1/8 teaspoon salt

  • Dash pepper

  • Dash garlic powder

  • Parsley for garnish


Instructions

  1. Preheat oven to 350 degrees.

  2. Pour entire can of pinto beans, including liquid, into a covered baking dish.

  3. In a small bowl stir water and cornstarch until dissolved. Add to beans and stir.

  4. Add all remaining ingredients and mix well until combined.

  5. Cover and bake for 90 minutes, stirring every 30 minutes as it thickens.

  6. Remove from oven and let stand 5 to 10 minutes before serving.

  7. Garnish with parsley and extra vegan bacon bits if desired.

Notes

Serve as a warm side for burgers, grilled veggies, picnic plates or any cozy comfort meal.
