2 cups all purpose flour (250 g)

1 teaspoon baking powder

1/2 teaspoon baking soda

2 teaspoons cornstarch

1/4 teaspoon salt

1/2 cup melted coconut oil (100 g)

1 cup light brown sugar or coconut sugar (200 g)

1/4 cup unsweetened applesauce (63 g)

2 teaspoons vanilla extract

1 cup vegan chocolate chips (175 g)
Instructions

Preheat the oven to 350 degrees and line a baking tray with parchment paper or a silicone mat.

In a medium bowl, whisk together the flour, baking powder, baking soda, cornstarch and salt.

In another bowl, whisk together the melted coconut oil and sugar until combined.

Add the applesauce and vanilla and mix until smooth.

Add the dry ingredients to the wet ingredients and stir until just combined.

Fold in the vegan chocolate chips. The dough may feel crumbly, but it will come together when you press it with your hands.

Roll the dough into 1.5 ounce balls and place them evenly on the baking tray.
