Chewy Chocolate Chip Cookies

These chewy chocolate chip cookies are everything a cookie should be. Soft centers, golden edges and plenty of gooey vegan chocolate chips in every bite. Ingredients

  • 2 cups all purpose flour (250 g)

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 2 teaspoons cornstarch

  • 1/4 teaspoon salt

  • 1/2 cup melted coconut oil (100 g)

  • 1 cup light brown sugar or coconut sugar (200 g)

  • 1/4 cup unsweetened applesauce (63 g)

  • 2 teaspoons vanilla extract

  • 1 cup vegan chocolate chips (175 g)


Instructions

  1. Preheat the oven to 350 degrees and line a baking tray with parchment paper or a silicone mat.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cornstarch and salt.

  3. In another bowl, whisk together the melted coconut oil and sugar until combined.

  4. Add the applesauce and vanilla and mix until smooth.

  5. Add the dry ingredients to the wet ingredients and stir until just combined.

  6. Fold in the vegan chocolate chips. The dough may feel crumbly, but it will come together when you press it with your hands.

  7. Roll the dough into 1.5 ounce balls and place them evenly on the baking tray.

  8. Bake for 10 to 12 minutes until the edges are lightly golden.

  9. Let the cookies cool on the tray for 5 to 10 minutes, then transfer to a wire rack to cool completely.

Notes

Enjoy these cookies with a glass of chilled plant based milk, crumble them over vegan ice cream or warm them in the microwave for ten seconds for extra meltiness.
