Description

A Cozy Cinnamon Hug

These soft baked doughnuts are dipped in cinnamon sugar for the perfect warm and cozy treat. They are quick to make, easy to love and guaranteed to brighten any morning.


Ingredients

  • 1 cup all purpose flour

  • 1/2 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/2 cup plus 2 tablespoons soy milk

  • 1 tablespoon applesauce

  • 1 tablespoon melted vegan butter

  • 1 teaspoon pure vanilla extract

Topping

  • 1/2 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 1/4 cup melted vegan butter


Instructions

  1. Preheat oven to 350 F and lightly spray a doughnut pan.

  2. In a large bowl whisk flour, sugar, baking powder, salt and cinnamon.

  3. Add soy milk, applesauce, melted vegan butter and vanilla. Stir until combined into a smooth, cake like batter.

  4. Spoon batter into doughnut pan, filling each well about three quarters full.

  5. Bake 9 to 10 minutes until edges are lightly golden.

  6. Cool for 2 to 3 minutes in the pan, then transfer doughnuts to a wire rack.

  7. Prepare topping by mixing sugar and cinnamon in a bowl. Melt vegan butter in a separate bowl.

  8. Dip each doughnut into melted butter and then into cinnamon sugar to coat.

  9. Enjoy warm or store for up to two days at room temperature.

Notes

May substitute whole wheat pastry flour or spelt flour for the all purpose flour. I haven’t tested them with gluten-free flour.

To ensure sugar is vegan, use certified organic.

May use any kind of non-dairy milk in place of the soy milk.

I prefer earth balance brand vegan butter, and it’s what I recommend.

These donuts should freeze well, though I haven’t tested it. Simply freeze, then thaw overnight and perhaps warm in the microwave.

If you don’t have a donut pan: Consider making these as little muffins instead! Bake at the same temperature for 18-20 minutes, then coat in the melted vegan butter and cinnamon sugar.

For Oil Free donuts: Simply omit the melted vegan butter in the batter and the coating. The cinnamon sugar will still stick, but the donuts will taste lighter and less rich.

Enjoy these doughnuts warm with coffee, hot cocoa or a cozy chai. They also make a sweet addition to brunch spreads or weekend breakfasts.
