Description

The Coolest Side Dish at the Table

This simple, creamy coleslaw comes together in minutes with fresh crunch and a bright, tangy sweet dressing that makes every bite refreshing and delicious.


Ingredients

Scale
  • 1 package coleslaw mix (about 14 ounces)

  • 1/2 cup vegan mayo

  • 2 tablespoons maple syrup

  • 1 tablespoon apple cider vinegar

  • 1 1/2 tablespoons lemon juice

  • 1/2 teaspoon freshly ground black pepper

  • salt to taste


Instructions

  1. In a large bowl, whisk together vegan mayo, maple syrup, apple cider vinegar, lemon juice, salt and pepper.

  2. Add coleslaw mix and stir until everything is evenly coated.

  3. Serve immediately. If preparing ahead, wait to mix until just before serving for best texture.

Notes

Serve alongside burgers, tacos, pulled jackfruit sandwiches or barbecue plates.

Add a sprinkle of fresh herbs or crushed nuts for extra flavor and texture.

Use as a topping for bowls, wraps or handhelds.
