Description

A Fiesta on a Stick

These smoky, colorful tofu kebabs turn classic fajita flavors into a fun, vibrant meal. Paired with zesty cilantro lime quinoa, they make a fresh and satisfying plant powered dish everyone will love.


Ingredients

Kebabs

  • 15 ounces super firm tofu, pressed and diced into 1 inch cubes

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 red onion

  • 1 tablespoon high heat oil

  • 2 tablespoons tamari or soy sauce

  • 1 tablespoon arrowroot or cornstarch

  • 2 teaspoons ground cumin

  • 2 teaspoons smoked paprika

  • 1 teaspoon chili powder

  • 1/2 teaspoon salt

  • 4 to 6 wooden skewers

Cilantro Lime Quinoa

  • 1 cup dry quinoa, cooked

  • 1 teaspoon olive oil

  • Juice of 2 limes

  • 1/2 cup finely chopped cilantro

  • 1 teaspoon salt

Serving Suggestions

  • Chips and salsa

  • Avocado or guacamole


Instructions

  1. Preheat oven to 400 F and line a baking sheet with parchment.

  2. In a large bowl combine tofu with oil, tamari, arrowroot and all spices. Toss to coat.

  3. Spread tofu on the baking sheet and bake 10 minutes, stirring halfway. Set aside.

  4. Core peppers and cut peppers and onion into 1 1/2 inch pieces. Toss in remaining oil and spices from the tofu bowl. Add extra if needed.

  5. Thread tofu and veggies onto skewers.

  6. Bake another 20 minutes, rotating halfway.
    Alternatively, grill 4 to 5 minutes per side for smoky char.

  7. In a bowl combine cooked quinoa, olive oil, lime juice, cilantro and salt. Stir well.

  8. Serve kebabs warm with quinoa, salsa and avocado.

Notes

Serve with extra lime wedges, creamy guacamole, fresh salsa or a handful of warm tortilla chips for a bright and flavorful meal.

Only Gluten-free if tamari is used as soy sauce contains gluten.
