Ingredients

  • 16 oz fettuccine

  • 3 tablespoons olive oil or soy margarine

  • 3 tablespoons flour

  • 4 tablespoons dry white wine or vegetable stock

  • 2 cups Silk unsweetened soy or almond milk

  • 1 teaspoon onion powder

  • 2 teaspoons garlic powder

  • 1 teaspoon salt

  • 1 teaspoon white pepper

  • 1/4 teaspoon nutmeg

  • Fresh chopped parsley for garnish


Instructions

  1. Cook fettuccine according to package instructions.

  2. While the pasta cooks, heat the olive oil or margarine in a medium saucepan.

  3. Add flour and the wine or vegetable stock. Cook for about 2 minutes, stirring constantly.

  4. Stir in the plant based milk along with the onion powder, garlic powder, salt, white pepper and nutmeg.

  5. Bring to a simmer and continue stirring until the sauce thickens, about 3 minutes.

  6. Remove from heat and toss with the cooked pasta.

  7. Divide onto six plates and top with fresh chopped parsley.

Notes

Serve with steamed broccoli, sautéed mushrooms or roasted cherry tomatoes for an extra pop of color and flavor.

A squeeze of lemon over the top adds a bright finish that pairs beautifully with the creamy sauce.

Add some optional vegan parmesan for some additional authentic flavor.
