Ingredients
-
1 1/2 cups all purpose flour
-
1/4 teaspoon salt
-
1 tablespoon sugar
-
2 teaspoons baking powder
-
6 tablespoons Earth Balance, cut into medium pieces
-
3/4 cup non dairy milk
Instructions
-
Preheat your oven to 400 degrees.
-
In a medium bowl, mix flour, salt, sugar and baking powder.
-
Using your fingers or a pastry cutter, cut the Earth Balance into the dry ingredients until the pieces are pea sized.
-
Remove 1 tablespoon of the milk and set aside for brushing.
-
Pour the remaining milk into the bowl and stir gently with a spatula until the dough just comes together.
-
Turn the dough onto a floured surface and knead very gently a few times until it is no longer overly sticky.
-
Pat the dough to 1 inch thick, then fold it over itself and pat back down to 1 inch thick. Repeat this gentle fold three times total.
-
After the final fold, pat the dough to about 3/4 inch thick. Cut out biscuits with a 2 to 2 1/2 inch cutter.
-
Gather any scraps and gently pat together to cut 1 or 2 more biscuits.
-
Place biscuits on a baking sheet and brush the tops with the reserved tablespoon of milk.
-
Bake for 15 to 17 minutes, until the tops are golden and beautiful.
Notes
Enjoy these biscuits warm with jam, vegan butter or alongside soups, chilis and holiday meals.
They are especially delicious fresh from the oven when the layers are at their fluffiest.
