Description

A Fresh Off The Grill Favorite

These smoky grilled avocados pair perfectly with a bright tomato basil salsa, creating a warm weather dish that is colorful, creamy and full of fresh flavor.


Ingredients

For the salsa

  • 1 jalapeño pepper seeded and cut into 1/8 inch cubes

  • 2 tablespoons finely chopped red onion

  • 1/4 teaspoon sea salt

  • 2 medium ripe tomatoes seeded and cut into 1/8 inch cubes

  • 1 tablespoon white balsamic or Champagne vinegar

  • 1 tablespoon extra virgin olive oil

  • 8 large basil leaves cut en chiffonade (strips)

For the avocados

  • 2 large ripe but firm avocados

  • 1 teaspoon lime juice

  • 1 teaspoon extra virgin olive oil

  • sea salt to taste


Instructions

  1. Place the jalapeño, red onion and sea salt in a molcajete and grind to a paste. Add to a bowl with the tomatoes, then drizzle in vinegar and olive oil. Stir in basil and set aside.

  2. Preheat grill or griddle to high heat.

  3. Slice avocados in half, remove pits and leave skins on.

  4. Whisk lime juice and olive oil, brush onto the cut sides of the avocados and sprinkle with sea salt.

  5. Grill cut side down until marked, flip and grill until skin is charred and flesh is soft.

  6. Let cool for 5 minutes. Spoon salsa into each avocado half.

  7. Garnish with basil and serve with extra salsa.

Notes

Add a sprinkle of toasted pepitas or crushed almonds for extra crunch.

Serve alongside grilled zucchini, potato wedges or a crisp green salad.

Top with extra lime juice, basil or fresh corn kernels for added brightness.
