Ingredients

3 cans (20 oz each) jackfruit in brine

1 teaspoon olive oil

1 small onion chopped

3 cloves garlic minced or garlic powder equivalent

1 teaspoon ground cumin

1/4 teaspoon cayenne pepper

1 teaspoon chili powder

1 teaspoon paprika

1.5 teaspoons liquid smoke

1 cup vegetable broth

1/2 cup barbecue sauce

4 buns or rolls
Instructions

Preheat oven to 400 degrees Fahrenheit.

Drain and rinse jackfruit. Remove the tough core pieces and press out most of the seeds.

Heat olive oil in a large pan and sauté onion until softened. Add garlic and cook briefly.

Add jackfruit, liquid smoke and all spices. Stir well.

Pour in vegetable broth, cover and simmer for 10 to 15 minutes until liquid is absorbed.
