Ingredients

  • 1 ¼ cups flour

  • ¾ cup bran

  • 2 teaspoons baking powder

  • ¼ cup sweetener (sugar, agave, or maple syrup)

  • 1 tablespoon oil

  • ⅓ cup soy milk

  • 1 ½ cups applesauce

  • 1 teaspoon vanilla extract

  • 1 banana


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly oil a muffin tin or use liners.

  2. In a bowl, mix together the flour, bran, and baking powder.

  3. In a blender or food processor, combine the wet ingredients: banana, applesauce, soy milk, oil, sweetener, and vanilla extract. Blend until smooth.

  4. Pour the wet mixture into the dry ingredients and fold lightly until just combined. Avoid overmixing to keep the muffins tender.

  5. Scoop the batter into the muffin tins, filling each about ¾ full.

  6. Bake for 20–30 minutes, or until a fork or toothpick inserted in the center comes out clean.

  7. Allow muffins to cool for a few minutes before removing from the tin. Enjoy warm or at room temperature.

Notes

Use a ripe banana for natural sweetness and better texture.

Lightly oil or use parchment liners to prevent sticking.

Add cinnamon or nutmeg for a spiced variation.

These muffins store well in an airtight container for a few days or freeze for longer storage.
