This vegan pesto sauce is pure green goodness. Fresh basil, nutty pine nuts, a touch of garlic and nutritional yeast blend together into a silky, aromatic sauce that instantly makes any meal feel vibrant and delicious. It is rich, herb packed and full of that classic pesto flavor without relying on cheese.

Best of all, it comes together in just minutes. A quick blend and you have a versatile, flavorful sauce that works beautifully on pasta, sandwiches, salads, roasted veggies or warm crusty bread. It is the kind of staple you will want to keep in your fridge all week long.


Ingredients

Scale
  • 1 cup fresh basil leaves (about 0.7 oz or 20 g), large stems removed
  • 1/4 cup extra virgin olive oil (4 tbsp)
  • 2 tbsp nutritional yeast
  • 2 tbsp pine nuts (raw or toasted)
  • 1 tsp lemon juice (optional)
  • 1 clove of garlic
  • Dash of salt
  • Dash of ground black pepper


Instructions

  1. Add all the ingredients to a bowl and blend with an immersion blender until smooth.
  2. You can also use a food processor (or even a regular blender) instead, but I prefer to use an immersion blender because it’s easier to clean.
  3. Serve immediately or keep it in an airtight container in the fridge for 5-7 days.

Notes

Pesto is delicious on bread, or with pasta, rice, potatoes, etc.

Toss this pesto with warm pasta, drizzle it over roasted vegetables, spread it on sandwiches or swirl it into soups.

It also makes a delightful topping for baked potatoes or fresh crusty bread.
