Description

Crispy Little BBQ Beauties

These smashed baby potatoes roast up golden, crispy and full of smoky sweet flavor. Drizzle with your favorite vegan barbecue sauce and enjoy a simple, crowd pleasing side that always brings smiles.


Ingredients

  • 2 pounds baby potatoes, scrubbed

  • 2 tablespoons brown sugar

  • 2 tablespoons chili powder

  • 1 tablespoon smoked paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • 1/2 teaspoon smoke salt or fine salt

  • 2 tablespoons high heat oil

  • 1/4 cup vegan barbecue sauce

  • Chopped fresh cilantro for serving


Instructions

  1. Preheat oven to 450 F. Line a large baking tray with parchment.

  2. Add potatoes to a stockpot, cover with water and bring to a boil. Reduce heat and gently simmer 15 to 20 minutes until fork tender.

  3. Drain and let cool a few minutes.

  4. In a small bowl whisk brown sugar, chili powder, smoked paprika, cumin, garlic powder and salt.

  5. Add potatoes to a large bowl. Drizzle with oil and toss. Add spice mixture and toss again.

  6. Transfer potatoes to the baking tray. Use the base of a metal measuring cup to gently smash each potato.

  7. Rub extra oil and spices over the tops.

  8. Roast 20 to 23 minutes until golden and crispy underneath.

  9. Serve warm with cilantro and a drizzle of vegan BBQ sauce.

Notes

Serve as a side for grilled veggies, veggie burgers or fresh salads.

They also shine on their own with extra BBQ sauce or a dollop of vegan ranch.
