Pie Crust

Make a double recipe of Easy Vegan Pie Crust by Nora Cooks:

Filling

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 3 garlic cloves, minced

  • 1/3 cup all purpose flour

  • 2 cups vegetable broth

  • 1 cup unsweetened almond milk

  • 3 cups frozen mixed vegetables (carrots, corn, green beans, peas)

  • 1 large russet potato, chopped into small chunks

  • 8 ounces vegan chicken style pieces or baked tofu, optional

  • 1/2 teaspoon salt, or to taste


Instructions

Prepare the Pie Crust

  1. Make a double batch of Easy Vegan Pie Crust.

  2. Divide the dough in half.

  3. Press one half evenly into a 9 inch pie pan. Trim extra and place in the refrigerator to chill.

  4. Wrap the second half of the dough and chill it as well.

Make the Filling

  1. Preheat oven to 400 degrees.

  2. Heat olive oil in a large skillet over medium high heat.

  3. Add the onion and garlic and cook until the onion becomes translucent, 1 to 2 minutes.

  4. Whisk in the flour, vegetable broth and almond milk.

  5. Add mixed vegetables, potato and vegan chicken or tofu, if using.

  6. Simmer 5 to 10 minutes until the mixture thickens. Taste and season with salt as needed.

Assemble the Pot Pie

  1. Pour the warm filling into the prepared bottom crust.

  2. Roll out the remaining crust on a lightly floured surface.

  3. Place it gently over the filling and trim any excess.

  4. Seal the edges with a fork or your fingers.

  5. Cut a few slits on top to allow steam to escape.

Bake

  1. Bake for 45 minutes or until the crust is beautifully golden brown.

  2. Allow to cool slightly before slicing.

  3. Serve and enjoy this comforting, hearty dish.

Notes

Serve warm with a side of leafy green salad or roasted vegetables for a complete and cozy meal.

This pot pie also reheats beautifully and the leftovers taste even better the next day.

If you are short on time you can also use a pre-made pie crusts, just make sure to check ingredients to ensure they are vegan.
