Description
Brunch Wrap of Champions
A warm, savory and deeply flavorful breakfast burrito filled with tofu scramble, spicy potato hash and smoky Beyond Brats. Wrapped with creamy avocado and fresh cilantro, this plant powered brunch favorite is cozy, filling and packed with bold flavor in every bite.
Ingredients
For the Burrito

1 package Beyond Sausage Brat Original (4 total)

14 oz extra firm tofu
-
8 oz enchilada sauce
-
1 cup roasted salted cashews
-
½ cup medium spicy chunky salsa

¼ cup nutritional yeast
-
Juice of 1 lime
-
½ teaspoon sea salt
-
2 to 3 large whole wheat tortillas

Chopped cilantro, for serving

Avocado, sliced
For the Vegan Hash
-
½ cup sweet potato, diced
-
½ cup red bell pepper, diced
-
½ cup yellow bell pepper, diced
-
½ cup yellow onion, diced
-
1 teaspoon cayenne pepper
-
½ teaspoon cinnamon
-
Salt and pepper, to taste

1 tablespoon coconut oil
Instructions
Make the Vegan Hash

Bring a medium skillet to medium heat and add the coconut oil.

Add garlic and onions and cook until fragrant.

Add the sweet potato, red bell pepper, cayenne pepper, cinnamon and salt and pepper to taste.

Sauté for 7 to 10 minutes until the sweet potatoes are soft. Set aside.
Make the Tofu Scramble

In a high speed blender, combine the enchilada sauce, cashews, salsa and nutritional yeast. Blend until completely smooth.

Drain and pat dry the tofu.

Add tofu to a large skillet and break it into crumbles with a spatula.

Heat to medium high and add the blended sauce, lime juice and sea salt.

Cook for 10 to 15 minutes, stirring occasionally, until the tofu becomes firmer and the sauce thickens.
Cook the Beyond Brats

Slice Beyond Sausages into medium sized pieces.

Cook in a skillet for 2 to 3 minutes per side until browned, then remove.
Assemble the Burritos

Lay out a warm tortilla. Add tofu scramble, Beyond Brat slices, a scoop of hash and sliced avocado.

Sprinkle with fresh cilantro and roll tightly into a burrito.

Notes
