Description

A Rustic Pasta Bowl Full of Tuscan Inspired Goodness

A hearty and vibrant pasta dish made with Beyond Sausage, burst tomatoes, spinach and creamy cannellini beans. Tossed with linguine and finished with vegan parmesan, this cozy skillet pasta brings bold Italian inspired flavor to your table with minimal effort.


Ingredients

  • 1 package Beyond Sausage Hot Italian (4 total), sliced and cooked

  • 8 oz vegan linguine pasta

  • 1 tbsp olive oil

  • 1 tbsp Earth Balance non dairy butter

  • 3 cloves garlic, minced

  • 1 cup grape or cherry tomatoes

  • 8 cranks freshly ground black pepper

  • ½ tsp salt

  • ½ tsp dried basil

  • 1 can (15 oz) cannellini beans, rinsed and drained

  • 4 oz baby spinach

  • 3 oz vegan shredded parmesan


Instructions

  1. Fill a large pot with water and bring it to a boil. Add the linguine and cook according to package directions, about 7 to 10 minutes. Drain and set aside.

  2. While the pasta cooks, heat the olive oil and non dairy butter in a large skillet over medium low. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. Add the sliced Beyond Sausage and sear for 2 to 3 minutes per side until browned.

  4. Add the tomatoes, salt, pepper and basil. Cook until the tomatoes burst and release their juices. Keep the heat moderate to avoid burning the garlic.

  5. Stir in the spinach and cook until it begins to wilt.

  6. Add the cannellini beans and stir until warmed through. Taste and adjust salt if needed.

  7. Add the cooked linguine to the skillet and toss until fully coated in the tomato garlic sauce.

  8. Stir in vegan shredded parmesan and toss again.

  9. Serve warm, topped with extra vegan parmesan if desired.

Notes

Add a sprinkle of fresh basil or parsley for brightness.

Pair with crusty vegan garlic bread or a simple green salad.

Drizzle with a little olive oil or chili crisp for extra richness or heat.
