Description

A Velvety, Plant Based Queso You Will Want to Pour on Everything

This cheezy cashew queso is smooth, tangy, and perfectly spiced, making it ideal for nachos, burritos, pasta, or dipping straight from the bowl.


Ingredients

Scale
  • 1 cup raw cashews, soaked 15 to 30 minutes and drained if not using a high power blender

  • 1/4 cup water

  • 1 teaspoon sea salt

  • Juice of 1/2 lemon

  • 3 tablespoons nutritional yeast

  • 1/8 teaspoon turmeric

  • 14 oz Willy’s Medium Salsa or Willy’s Hot Salsa, depending on spice preference


Instructions

  1. Add all ingredients to a high power blender.

  2. Blend until completely smooth and creamy, scraping down sides as needed.

  3. Taste and adjust seasoning or acidity if desired.

  4. Optional: warm the queso on the stovetop or in the microwave before serving.

Notes

Drizzle over nachos, tacos, burritos, or baked potatoes.

Stir into cooked pasta or rice for an instant cheezy sauce.

Serve warm with tortilla chips, salsa, and guacamole for an easy appetizer.
