Homemade Red Curry Cup o’ Noodles

Description

A Warm, Spicy Noodle Jar That Brings Instant Comfort Anywhere

This homemade red curry noodle cup layers curry paste, veggies, noodles and greens into a jar for a fast, flavorful meal that comes to life with a splash of boiling water.


Ingredients

Scale
  • 2 tsp red curry paste

  • 1/2 tsp vegetable bouillon paste

  • 1 tsp brown sugar

  • 1 tsp chili garlic sauce

  • 1 tsp soy sauce

  • 1/8 cup coconut milk

  • 1 cup cooked ramen or other noodles

  • 1/2 cup mixed frozen vegetables

  • 1/3 cup baked tofu, chopped (optional)

  • 1/2 cup sliced spinach

  • 2 tbsp chopped scallions

  • 1 lime wedge

  • Sesame seeds, for garnish


Instructions

  1. Whisk curry paste, bouillon paste, brown sugar, chili garlic sauce, soy sauce and coconut milk. Add to the bottom of a quart size mason jar.

  2. Layer noodles, frozen vegetables, tofu and spinach without packing too tightly.

  3. Place scallions and lime wedge in a small bag or wrapped tightly in plastic wrap. Remove air, seal and tuck into the jar. Close jar and refrigerate up to 3 days.

  4. To serve, remove scallion and lime packet. Fill jar with boiling water to the top. Seal and let sit 2 minutes.

  5. Add scallions and squeeze in lime juice. Garnish with sesame seeds and enjoy warm.

Notes

Add a drizzle of chili oil or sriracha for extra heat.

Top with fresh cilantro or Thai basil for added brightness.

Stir in extra coconut milk after adding water for a creamier broth.
