Description

Gooey No-Bake Chocolate Peanut Butter Pretzel Bars

These gooey no-bake chocolate peanut butter pretzel bars are layered with oats, crunchy pretzels, peanut butter, and melted chocolate. Easy to make and perfect for snacking, they deliver sweet and salty goodness in every bite.


Ingredients

  • 3 cups rolled oats

  • 1 cup vegan chocolate chips

  • 1 cup vegan butter

  • 1 cup crunchy peanut butter

  • 1/2 cup packed brown sugar

  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Line an 8×8 or 9×9 baking dish with parchment paper, allowing the paper to hang over the sides for easy removal.

  2. In a large saucepan over medium-low heat, melt the vegan butter. Add the brown sugar and stir until the sugar is fully dissolved.

  3. Stir in vanilla extract and peanut butter until smooth and combined.

  4. Gradually add rolled oats, stirring constantly, and cook on low heat for about 2 minutes until fully coated. Remove from heat.

  5. Press half of the oat mixture firmly into the bottom of the prepared pan.

  6. Layer 1/2 cup whole pretzels evenly over the oat base.

  7. Break 1 cup of the pretzels into smaller pieces and mix them into the remaining oat mixture. Set aside.

  8. Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring between each, until smooth.

  9. Pour most of the melted chocolate evenly over the pretzel layer, reserving a small amount for drizzling.

  10. Crumble the remaining oat-pretzel mixture over the chocolate layer. Drizzle with the reserved chocolate.

  11. Top with the remaining 1/2 cup pretzels.

  12. Refrigerate for at least 3 hours or overnight until set. Slice into bars and serve.

Notes

Press the oat mixture firmly to help the bars hold together.

Stir constantly when cooking oats to avoid sticking.

Chill fully before slicing for clean edges.

Store in the refrigerator to maintain texture.
