Ingredients

  • 1 small onion

  • 2 garlic cloves, minced

  • 2 celery stalks, minced

  • 1/4 red bell pepper, chopped

  • 2 cups vegetable broth

  • Two 15 oz cans black beans, undrained

  • 1/2 teaspoon cumin

  • 1/2 teaspoon cayenne pepper

  • 1 tablespoon lemon juice

  • 1 1/2 tablespoons arrowroot powder mixed with 1 1/2 tablespoons water
    (cornstarch works too)


Instructions

  1. In a large pot over medium high heat combine the onion, garlic, celery, bell pepper, vegetable broth and one can of black beans. Simmer for 10 minutes.

  2. Add half a can of beans, the cumin and the cayenne pepper. Cook for 5 more minutes.

  3. Puree the mixture in a blender or food processor, then return it to the pot.

  4. Add the remaining beans, lemon juice and the arrowroot mixture. Cook until the soup thickens and becomes creamy.

Notes

Make your bowl even more special by adding toppings that bring freshness and extra flavor. Try a squeeze of lime for brightness, chopped cilantro for color, sliced green onion for crunch or a swirl of vegan yogurt for creaminess. This soup also pairs beautifully with warm tortilla chips, a simple side salad or a slice of crusty bread for dipping.
