Ingredients

1 small onion

2 garlic cloves, minced

2 celery stalks, minced

1/4 red bell pepper, chopped

2 cups vegetable broth

Two 15 oz cans black beans, undrained

1/2 teaspoon cumin

1/2 teaspoon cayenne pepper

1 tablespoon lemon juice

1 1/2 tablespoons arrowroot powder mixed with 1 1/2 tablespoons water
(cornstarch works too)
Instructions

In a large pot over medium high heat combine the onion, garlic, celery, bell pepper, vegetable broth and one can of black beans. Simmer for 10 minutes.

Add half a can of beans, the cumin and the cayenne pepper. Cook for 5 more minutes.

Puree the mixture in a blender or food processor, then return it to the pot.

Add the remaining beans, lemon juice and the arrowroot mixture. Cook until the soup thickens and becomes creamy.
