Description

A Sticky Sweet Grilled Skewer That Steals the Whole Cookout

These quick and flavorful skewers combine Beyond Hot Italian Sausage with pineapple, mushrooms and red onion for a juicy, sweet and smoky bite. Brushed with BBQ sauce and grilled to perfection, they make a fun, satisfying plant powered dish for any backyard meal.


Ingredients

  • 1 package Beyond Sausage Hot Italian

  • 1 package crimini mushrooms

  • Pineapple, cut into 1 inch chunks

  • Red onion, cut into 1 inch chunks

  • BBQ sauce, plant based

  • Wooden skewers, soaked in water


Instructions

  1. Cut the Beyond Sausage into four 1.5 inch pieces.

  2. Cut pineapple and red onion into 1 inch pieces.

  3. Build each skewer in this order: sausage, red onion, pineapple, mushroom, sausage, red onion, pineapple, sausage.

  4. Grill skewers on a lightly oiled grill over medium high heat for 2 to 3 minutes per side.

  5. Brush with BBQ sauce halfway through cooking.

  6. Remove from grill and garnish with chopped cilantro if desired. Serve with extra BBQ sauce.

Notes

Serve over grilled rice or quinoa bowls for a complete summer meal.

Pair with corn on the cob, potato salad or fresh slaw for a cookout spread.

Add a squeeze of lime for a bright citrus kick.
