Spicy Sausage and Sweet Potato Pasta
This spicy sausage and sweet potato pasta combines hot Italian-style vegan sausage with sun-dried tomatoes, onions, and sweet potato croutons for a bold, comforting meal. A cozy, family-inspired pasta dish that is hearty, satisfying, and completely plant-based.

2 hot Italian Beyond Sausage links, cubed

8 oz bowtie pasta

1 large yellow onion, diced

1/2 cup sun-dried tomato strips

1 cup Certified Vegan Roots Farm Fresh Sweet Potato Croutons

1 tablespoon Miyoko’s butter

Black pepper and pink sea salt, to taste
Instructions

Bring a large pot of water to a boil. Add pasta and cook according to package directions.

While the pasta cooks, heat a large pan over medium heat. Add cubed Beyond Sausage and cook until browned and slightly crispy.

Add diced onion and sweet potato croutons to the pan. Cover and simmer until onions are soft and the sweet potatoes begin to tenderize.

Add sun-dried tomatoes and continue to cook until everything is lightly caramelized.
