Description

A Comforting Mushroom Gravy That Brings Big Flavor to Every Dish

This plant based gravy simmers mushrooms, thyme and savory broth into a rich sauce that is perfect for topping all your favorite comfort foods.


Ingredients

Scale
  • 4 tablespoons vegan butter

  • 1/2 onion finely diced

  • 8 ounces cremini mushrooms thinly sliced

  • 3 cloves garlic minced

  • 1 1/2 teaspoons fresh thyme

  • 3 tablespoons flour

  • 2 cups vegetable broth

  • 2 teaspoons tamari

  • A few dashes vegan Worcestershire sauce optional

  • Salt and black pepper to taste


Instructions

  1. Melt vegan butter in a skillet over medium high heat.

  2. Add onion and cook about 5 minutes or until translucent.

  3. Add mushrooms and cook until they release their juices.

  4. Stir in garlic and fresh thyme and cook until liquid evaporates and mushrooms begin to brown.

  5. Add flour and cook 1 minute while stirring often.

  6. Gradually pour in vegetable broth while whisking to prevent lumps.

  7. Add tamari and vegan Worcestershire if using.

  8. Season with salt and pepper and simmer 5 to 8 minutes until thickened.

Notes

Pour over mashed potatoes or cauliflower mash for instant comfort

Add to roasted vegetables, stuffing or grain bowls for extra depth

Use as a topping for vegan meatloaf or chickpea patties for a hearty main

Spoon over biscuits for a cozy brunch moment
