I’m a vegan mom of 3 kids and 3 rescued beagles. We’ve been vegan for about 5 years and absolutely love it. The initial reason for us going plant-based was to figure out how to heal my son’s skin and stomach issues and asthma. Within a couple of weeks of changing our lifestyle after watching Forks over Knives, he was free of all of his ailments. The rest of the family has benefited too with better immune systems and no more seasonal allergies. My husband also got rid of his asthma, which he’d been dealing with since childhood. So needless to say, we love this way of life and knowing that by taking care of our health we also help the environment and the animals is just such an amazing feeling. 

Breakfast: homemade muesli with cashew milk, topped with seasonal fruits and berries

Snack: a piece of fruit. Apples and bananas are our favorites at the moment

Lunch: An easy lunch can be peanut butter and apples with cinnamon on sprouted whole wheat toast or my daughter’s favorite is avocado toast with red pepper flakes and hemp seeds. We also love our chocolate, banana, dates, cashew smoothies during lunch time. Adds lots of energy and everyone looks forward to this treat. 

Dinner: Dinner varies a lot depending on how much time and other activities we have lined up for the evening. Some of our favorites are tempeh tacos, chickpea quesadillas, pasta with tomato sauce, chili, flavorful Thai coconut milk with veggies and rice or spicy Indian dahl. We love looking on Pinterest for dinner inspiration. We just type in what we want to eat and then add the magic word “vegan”. Endless yummy options at our fingertips. 

We absolutely love being vegan, our only regret is not having made the switch earlier.
