Introducing the “Banh Scott” – a vegan twist on the classic Banh Mi, named in homage to the legendary AC/DC singer. This sandwich burst with vibrant flavors and textures, offering a rock ‘n’ roll fusion of Vietnamese and vegan goodness. In this recipe, plan ahead for enhanced flavors by incorporating overnight marination. Get ready to relish in a symphony of taste in every bite. This sandwich is “TNT”!

INGREDIENTS

  • 1 ciabatta baguette 
  • 1 block certified Vegan Nasoya Super Firm Tofu 
  • 1 cup whole uncut cilantro, stems and leaves
  • 2 cups carrots, shredded
  • 1 english cucumber, sliced
  • 1 red onion, medium sliced pieces 
  • 1 1/2 cups rice vinegar 
  • 3 scallions, sliced into long pieces
  • 1/2 cup Follow Your Heart Vegenaise
  • 1 tbsp of Fly By Jen Chili Oil 
  • 1/2 tsp of toasted sesame oil 
  • 3 tbsp sriracha 
  • 1 tbsp rice vinegar
  • 1 tbsp San-J Certified Vegan Gluten Free Reduced Sodium Tamari Soy Sauce
  • 1 tbsp of maple syrup 
  • 2 tbsp water 

DIRECTIONS

  • Pre-preparation: Begin by slicing the tofu crosswise into 10 slices. To make the marinade, combine 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp maple syrup and 2 tbsp water. Mix well and pour over the tofu. In separate containers, take the shredded carrot, sliced cucumbers, and sliced onions. Marinate each with 1/2 cup of rice vinegar individually. You will need to place the marinated items in an airtight container or sealed bag and refrigerate overnight. 
  • Preheat the oven to 350 F.
  • Place the tofu slices on a sheet pan with parchment paper and bake for 30 minutes, flipping over at the 15 minute mark. Remove the marinated tofu from the oven to cool.
  • Meanwhile, keep the oven on and proceed to bake the ciabatta baguette for 10 minutes. 
  • Create the spread by mixing 2 tbsp of sriracha with vegan mayo. 
  • To assemble your Bahn Scott, start by slicing the bread. Spread the prepared dressing on both pieces. Layer with cucumbers, carrots, scallions and tofu. Drizzle chili oil and toasted sesame oil generously. Complete the sandwich by topping it with cilantro and red onions. This meticulous arrangement ensures savory flavors and textures in every bite.
