Ingredients

  • 1 Package Beyond Sausage® Brat Original (4 total)
  • 14 oz extra firm tofu
  • 8 oz enchilada sauce
  • 1 cup roasted salted cashews
  • ½ cup medium spicy chunky salsa
  • ¼ cup nutritional yeast
  • Juice of 1 lime
  • ½ teaspoon sea salt
  • 2-3 large whole wheat tortillas
  • Chopped cilantro
  • Avocado, sliced

Vegan Hash Recipe

  • ½ cup sweet potato, diced
  • ½ cup red bell pepper, diced
  • ½ cup yellow bell pepper, diced
  • ½ cup yellow onion, diced
  • 1 teaspoon cayenne pepper
  • ½ teaspoon cinnamon
  • Salt and pepper to taste
  • 1 tablespoon coconut oil

Directions

Vegan Hash Instructions

Bring a medium saucepan or skillet to medium heat. Add 1 tablespoon coconut oil. Add garlic and onions and cook until fragrant. Next, add sweet potato, red bell pepper, cayenne pepper, cinnamon and salt and pepper to taste.

Sauté for 7-10 minutes or until sweet potato becomes soft.

Breakfast Burrito Instructions

In a high-speed blender, blend together enchilada sauce, cashews, salsa, and nutritional yeast until completely smooth.

Drain tofu and pat dry.

Add tofu to a large skillet and use the flat part of a spatula to break up tofu.

Heat tofu to medium-high and add the sauce from the blender, lime juice, and salt.

Cook tofu for 10 – 15 minutes, or until tofu starts to become a little less soft.

Slice beyond brats into medium sized slices. Cook 2-3 minutes per side then remove.

To assemble, add tofu scramble followed by beyond brat slices, breakfast hash, and avocado.
