Savory Cauliflower Pakora Sandwich

Savory Cauliflower Pakora sandwich is absolutely full of flavor and crunch. Roasted cauliflower meets crispy onion pakora, adorned with refreshing mint chutney and creamy cilantro vegan yogurt sauce. Each bite promises satisfaction and a craving for more! 

Servings: 4

INGREDIENTS 

  • 1 bag vegan onion pakoras 
  • 4 vegan Kaiser rolls 
  • 1 jar vegan mint chutney 
  • 1 large cauliflower, sliced into 4 steaks 
  • 1 cup spinach leaves
  • 1 tsp Badia Curry Powder
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 tsp paprika 
  • 1 tsp black pepper 
  • 1/2 tsp salt 
  • 1 bottle avocado oil spray 

CILANTRO YOGURT SAUCE 

  • 2 cups Forager Cashew Plain Yogurt 
  • 2 tsp lemon juice 
  • 2 garlic cloves, minced 
  • 1/4 cup cilantro, chopped 

QUICK PICKLED RED ONIONS 

  • 1 large red onion, sliced 
  • 1 cup apple cider vinegar 
  • 1/2 cup water 
  • 1 tbsp Zulka Certified Vegan Morena Pure Cane Sugar 

DIRECTIONS 

  • First, prepare the quick pickled red onions by combining apple cider vinegar, water and sugar in a small saucepan. Heat the mixture until the sugar dissolves. Pour the liquid over the sliced red onions and set it aside to quickly pickle while you work on the rest of the recipe. 
  • Preheat the oven to 425°F and line a sheet pan with parchment paper. Arrange the four cauliflower steaks on the parchment lined pan. 
  • In a small bowl, combine all of the spices and mix thoroughly. Spray each side of the cauliflower steaks with avocado oil spray. Then sprinkle a generous amount of the spices onto each side of the cauliflower, ensuring to use up all of the blend. 
  • Roast the cauliflower steaks for 40 minutes. Carefully flipping them over at the 20 minute mark to ensure even cooking. 
  • Next prepare the cilantro yogurt sauce by adding all the ingredients to a bowl. Stir everything together until well combined then set it aside. 
  • While the cauliflower is roasting, prepare the onion pakora according to the directions on the package. Once cooked, slice them in half.
  • Now assemble your sandwich. Slice open the Kaiser roll and layer spinach on the bottom. Place seasoned cauliflower steak on top, followed by halves of onion pakora. Add a generous amount of cilantro yogurt sauce and a drizzle of mint chutney. Finally, top with the quick pickled red onions. Enjoy your Savory Cauliflower Pakora Sando!
