Nourish your body with our delicious Chickpea Noodle Soup. Packed with wholesome goodness from tender chickpeas and sweet potatoes, this easy-to-make recipe is sure to become a favorite in your kitchen.

Chickpea Noodle Soup


  • 2 cans chickpeas, drained and rinsed
  • 8oz of Italian rotini pasta
  • 1 large onion, diced
  • 1 large sweet potato, diced
  • 2 32oz containers of Simple Truth Organic No Chicken Broth Vegan
  • 1 cup nutritional yeast
  • 4 cloves garlic, sliced
  • 1 14.5oz can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 tbsp olive oil


In a stock pot over medium heat, drizzle olive oil and add onions, garlic, carrots, and sweet potatoes. Sauté until they are tender.

Next, sprinkle in the spices and nutritional yeast, then give everything a good mix. Pour in both containers of vegan no chicken broth, along with chickpeas and a can of tomatoes. Stir it all together, then let it simmer on medium-low heat for about 15 minutes.

While the soup simmers, cook your bag of pasta according to the directions on the back of the package. Once it’s cooked, drain the pasta and add it to the soup. Let everything simmer together for an additional 10 minutes and enjoy!
