Recipe makes at least 4 or 5 servings.
For those hot days outside or lazy days in the kitchen, try whipping up this simple chickpea salad. It can be served as a sandwich or be served on top of a bed of greens. This recipe can be perfect to make for lunch or dinner!
- 1 can of drained chickpeas
- 5 tablespoons of vegan mayo
- 1 celery stalk
- 1/2 of a red onion
- 3 dashes of garlic powder
- 2 slices of your favorite bread (for a sandwich)
Drain chickpeas and begin mashing them in a bowl or use a blender/food processor. Once they’re mostly mashed, add in your preferred brand of vegan mayo (We love using Vegenaise). Mix
Then chop your celery and red onion. Add your veggies and garlic powder into your mixture. Now mix it all together! Spoon out a generous portion (or to your stomach’s desire) onto your bread slices. Tip: If you want to jazz things up, add some sandwich toppings such as spinach leaves and tomato slices.
Note: If you’re a strong supporter of change and trying new things, add in some curry powder (to taste) for more flavor. You won’t regret it!
