Servings: 6
INGREDIENTS
- 2 cups vegan semi chocolate chips
- 2 tbsp refined coconut oil
- 6 tsp peanut butter
- 6 tsp Nature’s Choice Condensed Coconut Milk
- 1 box of Partake Certified Vegan Vanilla Wafers
- 1 tsp Maldon Sea Salt Flakes
DIRECTIONS
- Combine the chocolate chips and coconut oil to a microwave-safe container. Microwave in 30-second increments, stirring in between each interval, and repeat until the mixture is smooth and creamy.
- Pour 1 tablespoon of the melted chocolate mixture into each mold. After pouring, tap the mold gently on a flat surface to even out the melted chocolate.
- Take one Partake wafer and place it in the center on top of the melted chocolate in each mold, gently pressing it into the melted chocolate. This will help anchor the cookie in place as you continue to layer the ingredients.
- Drizzle 1 teaspoon of condensed coconut milk over the cookie in each mold.
- Top with 1 tablespoon of the melted chocolate mixture, ensuring it spreads evenly to the sides of the mold.
- Drizzle 1 teaspoon of peanut butter over the chocolate layer in each mold.
- Place another Partake cookie on top in the middle.
- Seal each mold with 1 tablespoon of melted chocolate, spreading it evenly to reach the sides of the mold.
- Repeat this process for each mold.
- Place the mold on a sheet pan and transfer it to the freezer for 20 minutes.
- Once the chocolate pucks have hardened in the freezer, gently remove them from the mold and place them on a serving platter. Sprinkle with Maldon sea salt flakes for an extra touch of flavor and serve. Enjoy the delicious and decadent Chocolate Partake Pucks!
NOTES
- If you notice that the melted chocolate in the microwave-safe container is getting firmer while filling the molds, simply place it back in the microwave for 30 seconds and stir until the chocolate is melted and smooth again. This will ensure that the chocolate remains easy to work with throughout the filling process.
- If you have any leftover melted chocolate, grab a sheet of parchment paper and drop small circles of chocolate onto it until you have used up all the chocolate. Let the chocolate circles cool until they harden, then remove them from the parchment paper and place them in a sealed container in the fridge. These chocolate pieces can be enjoyed as snacks or used in other recipes later on.
