Ingredients

  • 1 can of diced tomatoes
  • 1/2 cup water
  • 1/2 cup quinoa
  • 1 can black beans
  • 1 can kidney beans
  • 1 cup frozen veggie mix
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper

Directions

  1. Add water and tomatoes in a pot and bring to a boil.

2. Add quinoa and cook for 10 minutes.

3. Add beans, spices and frozen veggies. Cook for 10 minutes.
