Get ready to feel bright-eyed and energized with this vibrant salad. Fresh kale, juicy tomatoes and onions tossed in a creamy garlic, lemon, and nutritional yeast cashew dressing. Topped with a sprinkle of nutritious seeds and a dash of red pepper flakes, this salad is as delicious as it is healthy. Kale Yeah!
Servings: 4 to 6
INGREDIENTS
- 2 16 oz bags of ready to use kale
- 2 cup cherry tomatoes, sliced
- 1 red onion, diced
DRESSING
- 1 cup of raw cashews, soaked overnight & drained
- 1 cup olive oil
- 1 cup nutritional yeast
- 1/2 cup apple cider vinegar
- 7 garlic cloves
- 1 tsp of onion powder
- 1 tsp garlic powder
- 1/2 tsp cracked red pepper
- 1 tsp Bragg Liquid Amino
- 1 large lemon, juiced
- 2 tbsp water
- 2 tbsp Dijon mustard
- 1 tsp capers
TOPPINGS
- 1 tbsp raw black sesame seeds
- 1 tsp chia seeds
- 2 tbsp hemp seeds
- 1/4 cup raw pumpkin seeds
- 2 tbsp raw sunflower seeds
DIRECTIONS
- In a high-powered blender, add all the ingredients for the dressing. Blend until smooth and creamy.
- Place the kale in a large bowl and generously pour the dressing over it. Massage the kale until the dressing evenly coats all the pieces. Add in the tomatoes and onions, and toss everything together. Then top with all of the different seeds and a sprinkle of crushed red pepper flakes.
